Day 1- Whole 30
I started the program today and luckily since I was busy all day, I didn't get a chance to fantasise about all the food that "I wasn't eating" and could instead focus on the food I wanted to eat and prep instead. The first day was not too bad surprisingly, I'm guessing the cravings will get stronger and motivation will get weaker as time passes. Heres what I ate today:
Breakfast:
Egg muffins with greens, super easy to make and super yummy. My husband gave up his regular breakfast (he hans't joined me on this journey yet!) to eat the muffins! Check them out:

Heres What I did:
Made a regular omelette mix- whisked eggs (white and yolk both) and added chopped green peppers and green chillies- beware this is only if you like you food spicy! I then added this mixture into my pyrex muffin mould tray without greasing it at all and popped it into my oven for twenty mins. Voila, like little puffed up egg muffins were ready to eat! It was a bit challenging to consume this without any bread or ketchup but was quite a satisfying breakfast on the whole. I chucked my regular cup of chai and chose water instead.
Lunch: I was out all morning (school runs, gym, you know the drill…) so didn't squeeze in a snack today. Lunch was simple stir fried veggie lettuce wraps. Here's what they looked like:
It was not as bland as it looked at all actually and was quite dee-lish..I think I'm in love with the whole fresh food concept..right now anyways!

Stir Fry:
Broccoli and cauliflower shopped mid size, carrots cut into rings and red peppers finely diced and garlic paste. I browned the garlic past a bit in a woke first- (no oil or ghee) and then added all the ingredients with half a cup of water to help them cook with the steam a bit. Let this cook for 6-7 minutes and you're done!!! The iceberg lettuce was just peeled off a lettuce head and added to the plate.
Dinner: Dinner was a simple garlic marinated grilled chicken with sweet potato slice and tomatoes and garlic slices. Yes..I like garlic. Check out the picture below:
This was accompanied by a simple green salad with radish and red cabbage. Dressing was lemon and salt only.
